Cook for Two Tuesday – Taleggio Panini


Yumm-O! With Fall in the air and the cold nights moving in, comfort food always seems to go hand and hand! Who doesn’t LOVE a bowl full of soup and a grilled cheese?!


Here is a great new twist on the plain grilled cheese…


Prep Time: 10 min Cook Time: 10 min Level: EASY (my kind of cooking!)


Spread pasta sauce between 2 slices of crusty bread and top with *taleggio cheese; cook in a buttered skillet or panini press.


*Taleggio Cheese: this rich, semisoft cheese is made from whole cow’s milk. Its flavor can range from mild, sweet and nutty to rich and mushroomy, depending on its age. The rind is thin and soft and varies in color from yellow to orange to pink with spots of gray mold.


If you’re anything like me…you always seem to be missing one ingredient…I bet that you could probably make this with any great Italian cheese…maybe Mozzarella?!


Not that I don’t like homemade soup…sometimes you just don’t have time or again…ALL the ingredients! I always have some sort of low-sodium soup in my pantry and my guess is, YOU DO TO!
