As Event Planners we not only have a strong appreciation for all things beautiful, but we also LOVE to experience great food! Cooking for two (whether it be your husband, boyfriend, or a good friend) can be tough sometimes…we wanted to take a moment to share one of our “Cooking for Two” recipes.
Watch the butter, Paula loves her butter so start with less and add more if needed.
Prep Time: 5 min Cook Time: 35 min Serves: 4 -6 people (but you can always adjust the recipe to your liking)
4 tablespoons (1/2 stick) butter
4 skinless boneless chicken breast halves
1 cup sliced fresh mushrooms
2 tablespoons minced shallots
1/4 teaspoon salt
1/4 teaspoon pepper
4 ounces grated mozzarella cheese
Melt butter over medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Add chicken and cook 10 minutes on each side, or until tender. Transfer chicken to platter and sprinkle with grated cheese. Top with mushroom mixture. Cook and let stand 5 minutes or until cheese melts.
Serve with a Mesculin Salad with a drizzle of olive oil and squeeze of fresh lemon. Be sure to get a loaf of crusty bread, too! Try pairing with Kim Crawford Chardonnay and dinner is served!
